This wootz paring knife is the perfect tool for those kitchen tasks that require precision cutting rather than a long or wide blade. It is also ideal for chefs/cooks that prefer to use a smaller knife for a wide variety of kitchen tasks; not everyone likes a full-on chef knife for general food prep!
This blade is made from my standard wootz, which is modeled after the low-phosphorus chemistry seen in many of the historical Indian blades. This benefits from heat treating in modern method, resulting in an edge hardness of roughly 61HRC. Combined with the high carbide content this blade will take and hold an excellent edge through extensive use. The patterning is not as exciting or vibrant as many of my recent blades, but there is still a lot to see when you look more closely.
The handle has a micarta “bolster” to improve the strength and wear characteristics, while the body of the handle is a lovely, two-tone curly koa. The octagonal cross section provides excellent registration in the hand in multiple different orientations, while the transition from handle to blade has been tapered for improved “pinch grip” usage.
